This recipe is from the Junior League’s In the Kitchen With Kids
Fruit Salsa
1 1/2 apples, chopped
1 pint strawberries, chopped
3 kiwifruit, peeled and chopped
1/2 T grated orange zest
1 T (heaping) apple jelly
1 T orange juice
Prepare salsa: Combine the apples, strawberries and kiwifruit in a medium bowl. Use a zester to remove 1/2 tablespoon zest from an orange. Add the orange zest, apple jelly and orange juice to the fruit and mix gently. Chill if not using immediately.
Cinnamon-Sugar Crisps
4 (8-inch) tortillas
1 T water
1/2 T vanilla extract
1/4 cup sugar
1 tsp cinnamon
Prepare crisps: Preheat oven to 400. Cut each tortilla in triangles with kitchen shears or knife. Spray both sides of each triangle with nonstick cooking spray. Mix the water and vanilla in a small bowl. Use a pastry brush to brush the mixture on the triangles. Arrange on a baking sheet. Mix cinnamon and sugar and sprinkle on triangles. Bake for 8-10 minutes or until light brown. Let cool. Serve with fruit salsa.
