Recipe of the Week: BLT in a Bowl

Makes 4 Servings
If your family likes BLT sandwiches, consider our hearty BLT soup. Made with tomato soup, tortellini, baby spinach, and bacon bits, it’s a fun way to turn soup into a main meal. For the bacon, you could use vegetarian bacon bits or simply cook up a few slices of your favorite bacon and then crumble them up.
Two 10 ¾-ounce cans 30%-less-sodium condensed tomato soup
2 cans water
6 to 8 ounces frozen cheese tortellini
One 6-ounce bag pre-washed baby spinach (about 4 packed cups)
4 teaspoons real bacon bits
2 tablespoons grated Parmesan cheese, optional
1. Add the tomato soup and water to a large saucepan and stir to combine. Cover and bring to a boil.
2. Add the tortellini and cook, uncovered, according to package directions, stirring frequently. Do not drain. Stir in the spinach and cook until wilted, about 2 minutes.
3. Serve in individual bowls and top with bacon bits and Parmesan cheese as desired.
Nutrition Information per Serving: 260 calories, 4g fat (1.5g saturated), 780mg sodium, 47g carbohydrate, 3g fiber, 7g protein, 50% vitamin A, 60% vitamin C

We LOVE this at my house. Everyone eats it, which is saying a lot since my four year old is usually the 1/4 of the family who won’t eat anything put in front of him. YUMMY! If only it wasn’t 72 and sunny today, I’d make it for dinner
Does this actually taste like BLTs?
I’m not a big fan of tomato soup, but I LOVE BLTs!
I have a fabulous BLT DIP recipe though that tastes JUST like a blt.
